Tokyo’s Famous Molten Cheese Tart Recipe (8 Pieces)

Ingredients
- 60g unsalted butter, softened
- 50g powdered sugar
- 1g salt
- 1 egg yolk
- 30g almond flour
- 110g low gluten flour
- 170g cream cheese
- 35g whipping cream
- 40g egg white
- 40g granulated sugar
- 1 egg yolk for brushing
Instructions
- Cream together softened butter and powdered sugar until light and fluffy.
- Mix in salt and egg yolk until smooth.
- Add almond flour and low gluten flour. Mix until a dough forms.
- Wrap the dough and chill for at least 30 minutes.
- Preheat oven to 170°C (340°F). Roll out dough and press into tart molds.
- Prick tart shells with a fork and chill for 10 minutes.
- Bake tart shells for 13 to 15 minutes until lightly golden. Cool completely.
- Beat cream cheese until smooth, then mix in whipping cream and sugar.
- Whisk in egg white until glossy and slightly airy.
- Fill cooled tart shells with the cheese filling.
- Brush tops lightly with egg yolk.
- Bake at 220°C (428°F) for 5 to 7 minutes until tops are caramelized.
- Cool slightly before serving warm, or chill for a firmer texture.
