  2. Mix in salt and egg yolk until smooth.
  3. Add almond flour and low gluten flour. Mix until a dough forms.
  4. Wrap the dough and chill for at least 30 minutes.
  5. Preheat oven to 170°C (340°F). Roll out dough and press into tart molds.
  6. Prick tart shells with a fork and chill for 10 minutes.
  7. Bake tart shells for 13 to 15 minutes until lightly golden. Cool completely.
  8. Beat cream cheese until smooth, then mix in whipping cream and sugar.
  9. Whisk in egg white until glossy and slightly airy.
  10. Fill cooled tart shells with the cheese filling.
  11. Brush tops lightly with egg yolk.
  12. Bake at 220°C (428°F) for 5 to 7 minutes until tops are caramelized.
  13. Cool slightly before serving warm, or chill for a firmer texture.
